I’m struggling to find a way to start this post. To express my excitement, thankfulness, eagerness, and overall giddiness that Faring Well is now up and running. I could thank all of my encouraging followers who have written me uplifting messages over the past year about my break from blogging. I could welcome all of my new readers with whom I hope to share something meaningful and form relationships with, such as the ones I have already made over the course of my initial blogging venture that began over two years ago. I could thank my husband, Scott, for fully supporting my passion to create and share through blogging. He practically insisted that when we moved to our new home here in Denver four weeks ago that it be what I pour myself into, and has been encouraging me to keep at it the entire way. I could thank my mom for her positive affirmations and comforting words when I would call her at times doubting myself and wondering what the heck I was doing with my life. Instead of picking one of those I decided to list them all.

I am over-the-moon-and-back so fantastically excited to be launching Faring Well today. Considering our most recent move here to Denver, Colorado (more info on that crazy idea I had in future posts), I figured it would by most fitting to create a cookie dedicated to the most fantastic natural piece of creation I have ever lived next to – the Rocky Mountains (can I get a hoo-RAY!).

This cookie is soft with crisp edges. It’s hearty and loaded with great crunch from the hemp seeds, a little nutty from the almond butter, and the mini chocolate chips + marshmallows give it the perfect level of sweetness. Its a rocky looking cookie topped with snow, just like my new neighbor. Meet our new favorite cookie.

2 tablespoons chia seeds + 6 tablespoons water
1/2 cup brown sugar
1/2 cup cane sugar
1/2 cup coconut oil, liquid
1/4 cup almond butter
1 teaspoon vanilla
1 1/4 cup whole spelt flour
1 cup oat flour
1 cup rolled oats
1/4 cup hemp seeds
2 teaspoons baking powder
1/2 teaspoon salt
1 cup mini chocolate chips
Mini marshmallows

Preheat oven to 375F.

Combine the chia seeds and water in a medium size mixing bowl and let stand for 5 minutes. Add the sugars, melted coconut oil, almond butter, and vanilla. Mix well. Sprinkle in the flours, oats, hemp seeds, baking powder, and salt. Mix until almost fully combined, then add the mini chocolate chips and mix well. Using a cookie scoop, or a spoon, form tablespoon sized cookie dough balls on a parchment lined cookie sheet. Press the cookie dough ball down with your fingertips as you wedge in three mini marshmallows per cookie. Bake for 8 minutes, or until edges are slightly brown. Remove from the cookie sheet to cool and store in an airtight container at room temperature for up to 5 days.

Yields approximately 32 cookies.
