HEY-OH! I hope your week was full of cozy fall vibes, radiators getting turned on, and maybe even a few flurries. We had a handful fall for a hot second Thursday morning and my head nearly hit the ceiling I jumped so high. More legitimate flakes should be on their way this next week and I could squeal. This past week I had Christmas music playing, bowls upon bowls of dough proofing, with the oven seemingly never turned off – and an overwhelming amount of new inspiration. Thanks to you wonderful people and the gorgeous encouragement I received in response to my last post this week, I took a much needed break from cooking for the sake of sharing – and just played in my kitchen. In just a few days I was able to create several new holiday-y, squeal-worthy recipes I cannot wait to share with you all over the next two months. My belly is full, heart is happy, and our home smells so yummy. I hope you can say the same too. Remember to take a beat this weekend and make what you know needs to happen in order to reset and let out a good, deep, careless belly laugh. Speaking of health and happiness – a few months ago I added strength training workouts to my otherwise run-your-brains-out-only routine I had been following for the past (14?) years. Being strong from head to toe was something I’ve always wanted for myself, but never took the time to do. A good friend of mine does virtual personal training. So even though she was in Phoenix, she still trained me here in Denver. It was so neat. But along with the training came the need for more conscious eating – specifically protein. That is when I drafted up these little guys to have around after my sessions in the afternoon. They help replenish my ginormous (okay, they are still super tiny) muscles with plenty of healthy carbohydrates, fats, and protein. They also make a great little snack during the day when you need a treat / afternoon pick me up with some nutrients for a boost. Anything chocolatey has my attention, and with the addition of caramel-y maca this recipe is a tastebud winner. Plus, they pack as orbs of fuel for any outdoor adventures you may have in store this season. Any way you enjoy them, just enjoy. And happy weekend!

Makes around 18 bites.

1 cup raw almonds
1 cup raw cashews
3 tablespoons hemp protein powder
2 tablespoons flax meal
4 tablespoons raw cacao powder
1 tablespoon raw maca powder
5 dates, dried
4 to 5 tablespoons hemp milk

Add all of the ingredients except for the dates and hemp milk to the bowl of a food processor. Process until it resembles a coarse meal (about 30 seconds). Pit and roughly chop the dates, then add them to the processor. Pulse for another 30 seconds. Now add the hemp milk (I used 4 tablespoons but if yours is a tad dry add the 5th). Blend until the mixture is whirling around in a cohesive ball. It should be sticky enough to hold together, but not too sticky to handle. Roll 2 tablespoons worth of the mixture into balls. Leave as-is or roll in additional maca powder for extra flavor. Store in an airtight container in the refrigerator. I usually like to let mine chill for a few hours before enjoying, but by all means you can dig in right away. Happy (protein packed) snacking!

    our flurries have a prediction date but not an appearance yet, i’m patiently waiting to see what kind of winter is in store this season – but no matter the weather, always one full of deep belly laughs and sweet sighs. i’m glad your week was restful. & i am so elated to hear of your strength training! i do it a few times a week and feel so much better because of it (tiny but strong muscles!). these energy bites fit the bill, great idea. on a side curiosity – do you run every day? it’s nice to read and enjoy your energy on the weekend, jessie!

    I’m so glad you had a nice break, Jessie! But I’m terribly jealous that you had flurries over there in Denver… over here in CT, it’s 60 degrees and my fluffy scarves are taunting me over in my closet. I’m so excited for the Christmas season and I just want the weather to match it!! Send some snowflakes this way please!! ;)

    These look like the perfect little bites to snack on, and they’re healthy! I love it. We have not had an flurries where I’m at, but I am SO excited for them to arrive. I am hoping that playing non-stop Christmas on Pandora will bring them a little quicker :)

    It is beautiful here too! Haven’t had any flurries yet, but the leaves have said goodbye for the most part and we’ve broken out the Christmas music! We’re officially in holiday season! YAY! These look so yummy, by the way!

    OMG I had christmas music on this week and Barrett totally got annoyed with me about it! I was dancing in the kitchen, he was all “if it makes you this happy we can leave it on…but I feel like it’s my job as your husband to remind you that it’s only November” and I was all “fine, just a couple more songs and then I’ll change it to plain music.” And I danced to Bing Crosby while he did dishes and it was raining and it was amazing. As are these protein bites. ;) (PS: Hooray for weight lifting!)

    Yummy!!! I’m glad you found your little hiatus to be rejuvenating! I just recently added more strength training to my workouts too. My knees were starting to hurt from strictly running.. but for now I feel like my running is suffering. Balance is tough!! I can’t wait to try these power snacks!

    Oh, going to try this, looks like a quick and very satisfying snack! I’ve got everything but almonds but it’s maybe okey to use cashews instead? Going for it!
