Last week we celebrated our one year in Colorado – and by celebrated I mean we gave each other a solid pat on the back and took a nap. This year was a tough-y. As would be expected after moving to a new state without having visited, after selling all of our possessions (including our cars), with no jobs, and no friends or family. Some call us true adventures, others call us crazy, and our response? We usually just shrug and give a short laugh with lifted eyebrows. Heck if we know. We’re just glad we didn’t bolt, and can say with confidence that we have grown a great deal since this time last year. As with most hard things in life, you usually come out the other end stronger than before. Life is gracious, and for this we are incredibly thankful.

Before moving to this Rocky Mountain state, we called Costa Mesa, California home. So you can imagine my excitement when Jeremy and Ryan from The Created Co. reached out to me about creating some cozy fall sips to go along with their stellar mugs this season. Back in California they would have been our neighbors, residing in Huntington Beach where they run their business together. This brought back so many happy memories I had as a kid driving down Beach Boulevard with my family for a day at the beach in Huntington. Rollerblading the boardwalk, getting smashed by the waves as I try to catch a few on my boogie board, a trip to Jack’s on Main St., and dinner on the pier at Ruby’s Diner. Oh life, you have been too good. Needless to say I jumped on board with The Created Co. immediately and have fallen for not only their mugs, but their philosophy too. Jeremy and Ryan believe in everyone asking themselves “What was I created for?” – and then doing just that, what you were created to do. Their mugs aren’t just well designed, they’re inspiring. Its time to bring the café home this weekend and whip up one of our favorite morning sips in the fall, a pumpkin spice latte! Forget the dairy and processed sugar, these mugs are filled with only the best ingredients for you without sacrificing one ounce of the flavor. Real pumpkin purée and my very own spice mix are the stars here, alongside a rich and creamy hemp milk base, a spoonful of whipped coconut cream, and of course – a brew of some seriously strong coffee. As if this wasn’t enough fall flavor for your morning taste buds to handle, I threw in a new favorite biscotti recipe of mine – dark chocolate chunk molasses. Its the perfect dunking partner to this latte and I could burst I’m so excited to share these two recipes with you today over on The Created Co.’s site!

    Also, major congrats on the one year mark in CO! I know y’all have been, let’s say iffy about the move, but at the same time it’s interesting because, though I didn’t know you while you were in CA, you seem to have thrived this year! Moved to a new place, started a new blog, took home a major award because you and said blog are rad, and then made the prettiest pumpkin spice lattes anyone has ever made in history–quite the accomplishment I might add. And these photos are tops. Cheers to another year of growth and success and happiness!! (I’m such a sap, LOL.)

    Happy one year anniversary! I think I mentioned (my mind has been buzzing these days) I have fond memories of Colorado; visited a few times as a kid. My Mom and Dad shared their love of the Rockies. I still have yet to get you one of our iconic photos. You would so appreciate it! I think you guys are Independence pass personified! xo

    I am reading this post at my desk and thinking that I really could go for that latte right now it looks delicious.
    My husband and I did a similar crazy move when we were young, to Steamboat Springs CO. No jobs, sold all our things and lived at a campground for a while. They happen to be some of my fondest memories and also the best life lessons. Congratulations on your anniversary in Colorado.

    Woop Woop 1 year in CO! Kudos on being able to create a PSL using actual Pumpkin! My attempts were futile! :p These look delish and the mugs are super cute! I’m seriously a sucker for coffee mugs. The Biscotti may have to find its way into my oven…. then into my belly! :)

    Moving can be so hard, but good for you for sticking it out. I’ve always wanted to see Colorado and imagine it is incredibly beautiful and wild. I think you chose a good place to relocate, whether you knew it or not at the time. Can’t wait to try these yummy lattes, but maybe without the coffee. Can I do that or will it be too sweet?     Pumpkin spice lattes are my ultimate guilty pleasure in the fall, but I can’t get over my coffee high horse to buy them from Starbucks so I just make my own at home, hehe. The mugs are adorable! And happy one year in Colorado, lady! I was so stoked to be moving back to Toronto before I made the move but couldn’t help but second guess my decision once I got here. I think questioning our decisions is pretty inevitable/easy to do when we’re faced with the unfamiliar, but I’m glad it’s worked out for you and Scott!

    Jessie, congrats on your first year out here! I’m so happy you are falling in love with Colorado. That’s so inspiring and awesome that you two sold basically everything and took a leap of faith. I’m such a firm believer in following your passion, even if it seems crazy at first. I always imagine walking over a deep ravine and taking each bold step, as the bridge builds itself under my feet. The universe will meet us and follow through! I told my dad that I’d only be out here for five years, when I graduated college, and it’s been a crazy ride coming up on 13!! Cheers on PSLs, especially the dairy-free kind.

    Lovely post Jessie! Congratulations on making it to the one year mark! I know your first year must have been really hard, challenging, and probably heartbreaking too…I was seriously a mess during my first year in Toronto! But you know what…surprisingly, we get used to what life throws at us and we learn to embrace the decisions we make. Things that seemed impossible a while back suddenly become natural. We look forward, we move on, we evolve. It’s all part of the wonderful experience that is life, and it just makes us stronger. You’ve accomplished SO MUCH in one year, you should be immensely proud of yourself. If you ever doubt or forget that, remember that so many people are behind you and cheering for you (myself included!). These pumpkin spice lattés are exactly what I need right now.
