Two Ingredient Strawberry Milkshakes | Faring Well | #vegan #recipes

Oh hey there! Remember this little number from last week? Well I’m popping in to share this super-simple delicious milkshake with you today before hopping on a plane to NYC in a few hours. I’ve been feeling the need to mix things up a bit here on the blog to keep my creative juices flowing. My rigid schedule of a recipe post each Wednesday, and Saturday Links post every Saturday, has left me feeling more burdened than organized by this static structure as of late. Of course I will strive for a recipe post here every week – but if my flow one week leads me to posting on a Tuesday or Thursday, I’m not going to sweat it. My Saturday Links posts will continue – but maybe only one every few weeks (or once a month?) lets roll with it and see! There are so many fun, creative projects filling my space lately that I felt the need to let go a bit of some rigidity and incorporate some more loosey-goosey vibes in order to flow better with what is inspiring me at the moment. I promise this only means more delicious, well thought out content for you to benefit from in this space.

And this milkshake? Well, it comes with some great news. I have been quiet about my health issues since first mentioning them in a post a few months back. Things have been rough, to say the least, and we are still awaiting results and going through further testing to figure out all of what has been/still is happening. I plan on sharing more details about everything that has been going on when more is known, but I feel as if this little triumph needs to be shared now… You guys, I FEEL BETTER. It started a few weeks ago, when I started losing symptoms gradually and feeling stronger each day. Then this past week – BAM – I no longer feel sick. I’m no longer extremely fatigued every minute of every day, fighting a head-rush of nausea to climb the stairs, and panting after bending down to tie my shoes. I no longer have to lay on the floor every afternoon for hours because I’m too nauseous and dizzy to do anything else. Stomach pains? Gone. Dizziness? Magically has disappeared. The sickly, sallow skin I use to see on my face in the mirror is gaining color once more. My daily run has gone from it’s weak little hobble to an actual jog. A JOG. You guys, I can jog again! Having been a long distance runner for the past 13 years, this was by far the greatest hit to my happiness the past few months when every step was a struggle. But now? I’ve been charging up hills without feeling sick, in fact, that nauseous/dizzy/fatigued feeling I had grown accustomed to has been replaced with a deeply missed runners’ high. It’s been so long, I had forgotten what it felt like to feel well again. I got home the other day from my run, realizing the healing that had just magically taken place, broke down in tears (of joy), and then made this strawberry milkshake to celebrate.

Tid-bits: I did a little milkshake reversal in this recipe to make it ridiculously easy to whip up in a flash. Usually milkshakes are a blend of frozen cream (ice cream) and fresh strawberries. I flipped their consistencies and blended fresh cream with frozen strawberries. End result? BRILLIANT. Feel free to drizzle in some maple syrup for additional sweetness and/or add vanilla extract to really give it that vanilla ice cream flavor action. Either way, we are all totally winning when we make these!

Makes 1 very happy strawberry milkshake.

2/3 cup canned light coconut milk
1 to 1 1/2 cups frozen strawberries

drizzle of maple syrup
splash of vanilla extract

Add the coconut milk to your blender with 1 cup of the frozen strawberries. Blend on high until thick and creamy. Continue to add more frozen strawberries until it reaches your desired level of thickness. Enjoy as is, or blend in a light drizzle of maple syrup for added sweetness and a splash of vanilla to really take the flavor up a notch. Now go do a happy strawberry milkshake dance and enjoy!

    Up, up, and awaaaaay — and on so many levels! Best of luck in NY, Jessie, and the news that you are feeling so much more like yourself is a HUGE relief to many of us. Prayers are being answered! Loved the switcheroo with the frozen strawberries and I had to laugh as I just plucked and washed a big bag of sweet red, seedless grapes this morning and put them in the freezer for the grandkids who love them frozen, especially during the hot and humid summer months in VA.     So happy to hear that you’re feeling better! Hope you’ll figure out what was causing the symptoms though, so it’s easier to understand what has been going on lately.

I’ve been on a coconut milk kick lately after squeezing them out of coconuts and I’m so happy to have found more things I can do with it!! fresh cream + frozen berries – genius. I will try it! The color looks so bright and cheerful, definitely what I need after several days of crazy rain.

    So glad you are feeling better but sorry to hear that you have not been well. I know how hard that can be for those of us who really pride ourselves and being healthy and taking care of our bodies in the best ways we know how. And then something hits us out of the blue and it’s like “what the heck! I was doing everything right!” Hang in there and if your interested I’d be happy to share some thoughts and resources with you from an Ayurvedic perspective. You actually have one of the best Ayurvedic doctors in the country right in Boulder ( I have found Ayurveda to be super helpful and love how much of it relies on dietary changes without feeling like you’re depriving yourself. Anyways, let me know if you want to talk more.

    And this shake looks delicious! I’ve been a bit obsessed with shakes lately and will have to try this one today!

    Not nearly the same but i have been battling a injury for a few weeks now and the small pleasures of feeling better (or at least improvement) is amazing. Jogging is still a bit away for me but l live vicariously through others! So happy you are on the upswing and feeling better. I don’t know what you’re actually dealing with – but I’ve had so many of those same symptoms myself and I know how awful it can be to deal with that.
