Oh hey there! Remember this little number from last week? Well I’m popping in to share this super-simple delicious milkshake with you today before hopping on a plane to NYC in a few hours. I’ve been feeling the need to mix things up a bit here on the blog to keep my creative juices flowing. My rigid schedule of a recipe post each Wednesday, and Saturday Links post every Saturday, has left me feeling more burdened than organized by this static structure as of late. Of course I will strive for a recipe post here every week – but if my flow one week leads me to posting on a Tuesday or Thursday, I’m not going to sweat it. My Saturday Links posts will continue – but maybe only one every few weeks (or once a month?) lets roll with it and see! There are so many fun, creative projects filling my space lately that I felt the need to let go a bit of some rigidity and incorporate some more loosey-goosey vibes in order to flow better with what is inspiring me at the moment. I promise this only means more delicious, well thought out content for you to benefit from in this space.
And this milkshake? Well, it comes with some great news. I have been quiet about my health issues since first mentioning them in a post a few months back. Things have been rough, to say the least, and we are still awaiting results and going through further testing to figure out all of what has been/still is happening. I plan on sharing more details about everything that has been going on when more is known, but I feel as if this little triumph needs to be shared now… You guys, I FEEL BETTER. It started a few weeks ago, when I started losing symptoms gradually and feeling stronger each day. Then this past week – BAM – I no longer feel sick. I’m no longer extremely fatigued every minute of every day, fighting a head-rush of nausea to climb the stairs, and panting after bending down to tie my shoes. I no longer have to lay on the floor every afternoon for hours because I’m too nauseous and dizzy to do anything else. Stomach pains? Gone. Dizziness? Magically has disappeared. The sickly, sallow skin I use to see on my face in the mirror is gaining color once more. My daily run has gone from it’s weak little hobble to an actual jog. A JOG. You guys, I can jog again! Having been a long distance runner for the past 13 years, this was by far the greatest hit to my happiness the past few months when every step was a struggle. But now? I’ve been charging up hills without feeling sick, in fact, that nauseous/dizzy/fatigued feeling I had grown accustomed to has been replaced with a deeply missed runners’ high. It’s been so long, I had forgotten what it felt like to feel well again. I got home the other day from my run, realizing the healing that had just magically taken place, broke down in tears (of joy), and then made this strawberry milkshake to celebrate.
Tid-bits: I did a little milkshake reversal in this recipe to make it ridiculously easy to whip up in a flash. Usually milkshakes are a blend of frozen cream (ice cream) and fresh strawberries. I flipped their consistencies and blended fresh cream with frozen strawberries. End result? BRILLIANT. Feel free to drizzle in some maple syrup for additional sweetness and/or add vanilla extract to really give it that vanilla ice cream flavor action. Either way, we are all totally winning when we make these!
Makes 1 very happy strawberry milkshake.
2/3 cup canned light coconut milk
1 to 1 1/2 cups frozen strawberries
drizzle of maple syrup
splash of vanilla extract
Add the coconut milk to your blender with 1 cup of the frozen strawberries. Blend on high until thick and creamy. Continue to add more frozen strawberries until it reaches your desired level of thickness. Enjoy as is, or blend in a light drizzle of maple syrup for added sweetness and a splash of vanilla to really take the flavor up a notch. Now go do a happy strawberry milkshake dance and enjoy!
